La Sidre represents the legacy of traditional Basque cooking, recipes passed down from generation to generation, from mother to daughter, from kitchen to kitchen.
We cook with fresh, local and seasonal ingredients, respecting the essence of a cuisine that has been forged with humility, hard work and integrity.
Behind each dish are the expert hands who have dedicated their lives to this restaurant, our chefs grew up in this kitchen and made it their home. The female head chef for hot and dessert sections who stood in one day to cover for an absentee and never left. Who learnt from their mother in a traditional tavern until, years later, fate led them to La Sidre. At the charcoal grill, firm hands masterfully control the fire, the semi-finalist of the 2024 Spanish Grill Chef Championship.
